Wasabi Peanut Cole Slaw
Serve grilled tuna or grilled meats or poultry

Servings: 6

Dressing:
1/2 cup chopped fresh cilantro
1/4 cup chopped green onions
3 tablespoons rice wine vinegar
1 tablespoon sesame oil
2 tablespoons low fat mayonnaise (we used Hellman's)
1 teaspoon sugar
1 teaspoon grated fresh ginger
2 teaspoons wasabi paste
1/2 teaspoon salt
1/2 teaspoon pepper

Slaw:
1 - 16 ounce package shredded coleslaw mix (red & green cabbage & carrots)
1/2 cup lightly salted peanuts

Whisk together dressing ingredients in a large bowl. Add coleslaw mix and stir to coat. Cover and chill 1 hour. Stir in peanuts just before serving.
