Tuscan Tuna Salad
A simple easy salad for a hot summer day.

Servings: 4

• 1 - 20 ounce can of cannellini beans, rinsed and drained
• 1/2 cup sweet red onion, sliced very thin
• 1 can white albacore tuna, packed in water, drained
• 1/3 cup fat-free red wine vinaigrette
• salt and fresh cracked black pepper to taste
• 5 cups mixed baby salad greens or mesclun mix

Rinse and drain the beans. Place in a large bowl and add onion, tuna, vinaigrette, salt and pepper and mix well. Serve on a bed of salad greens.
