Tuscan Tuna Salad
A simple easy salad for a hot summer day.
1 - 20 ounce
can of cannellini beans, rinsed and drained
1/2 cup sweet red onion, sliced very thin
1 can white albacore tuna, packed in water, drained
1/3 cup fat-free red wine vinaigrette
salt and fresh cracked black pepper to taste
mixed baby salad greens or mesclun mix
Rinse and drain the beans. Place in a large bowl and add onion, tuna,
vinaigrette, salt and pepper and mix well. Serve on a bed of salad greens.
