Thai Cucumber Salad
Serve with your favorite Asian entree.

Servings: 6

• 1/4 cup fresh lime juice
• 1 1/2 tablespoons nam pla (fish sauce)*
• 1 1/2 tablespoons sugar
• 1 1/2 tablespoons fresh jalapeno peppers, seeded and minced
• 2 cloves garlic, minced
• 1 1/2 medium English hothouse cucumber, halved, seeded and sliced very thin
• 3/4 cup thinly sliced red onion
• 3 tablespoons chopped fresh mint
• 2 tablespoons dry roasted peanuts, coarsely chopped (optional)

Whisk first 5 ingredients in medium bowl. Place cucumbers, onion and mint in a large bowl. Add dressing and toss to coat. Season salad to taste with salt and pepper. Sprinkle with chopped peanuts and serve.

*You can find nam pla at most Asian markets or in many large supermarkets.
