Strawberry, Cucumber and Spinach Salad
Excellent served with grilled meat or poultry .

Servings: 4

1 - 10 to 12 ounce package baby spinach, washed and spun dry
1/3 cup toasted sliced almonds
1 pint fresh strawberries, hulled and quartered
1 medium hothouse cucumber, peeled, seeded and diced

1/2 lemon, juiced
2 tablespoons white wine vinegar
1/3 scant cup sugar
1 tablespoon vegetable oil

In a large salad bowl, add the spinach, almonds, strawberries, and cucumber and toss together. Mix dressing and pour on salad and toss again.
