South American Potato Salad
Perfect served with grilled meats or poultry.

Servings: 6

• 1 pound red potatoes
• 1 green onion
• 2 tablespoons lime or lemon juice
• 3 tablespoons low fat mayonnaise
• 1 stalk celery
• 1/2 carrot, shaved with a vegetable peeler
• Salt and pepper

Cut potatoes in medium wedges and cook until done, but not too soft. Drain.
Put cooked potatoes into a bowl, while still hot squeeze citrus juice over them and toss.

Let cool. While potatoes cool, chop celery and green onion and shave ½ carrot.

Once potatoes have cooled, add the mayonnaise, celery, green onions, and carrot shavings. Add salt and pepper to taste. Stir until just mixed together. Refrigerate for at least 30 minutes to let the flavors mix.
