Drain pineapple juice into measuring cup, add enough water to juice to make 1 cup and bring to boil. Pour into blender and add gelatin and cheese. Blend on medium speed about 2 minutes until cheese is thoroughly blended. Add sugar, vanilla and 7-Up®. Blend on high speed 1 minute. Add pineapple and mix 1 minute on low speed. Pour into mold and chill in refrigerator approximately 5 hours.
