Salsa Salad
Serve with any grilled meat or poultry - & perfect with Mexican food.

Servings: 4

4 ripe Roma tomatoes, halved and chopped
1 small avocado, coursely diced
2 tablespoons minced sweet onion
1 green pepper, seeded and coursely diced
1/4 teaspoon garlic powder (or to taste)
2 teaspoons lime juice (or to taste)
Salt to taste (1 start with 1/4 teaspoon)
1/4 cup minced cilantro

Mix ingredients together and serve. (If salad is to be left out on a buffet, I use a little Fruit Fresh on the avocado so it doesn't turn.)

Serve as is or over a bed of greens.

COOKS NOTE: The seasonings on this can easily be adjusted to taste. I have started out low, so feel free to add more to your own personal taste.
