Roma Tomato Salad
A satifying salad filled with healthy vegetables .

Servings: 6 (1 cup servings)

• 2 cups romaine lettuce
• 2 cups Bibb lettuce
• 2 cups escarole
• 12 slices Roma tomato
• 1/2 cup balsamic vinegar
• 1 tablespoon olive oil
• 1 tablespoon grated Parmesan cheese
• 2 cloves garlic, minced
• 1 tablespoon lemon juice
• 1/4 cup low fat chicken broth
• Salt and pepper to taste

In a salad bowl, combine the escarole, romaine, Bibb lettuce and tomatoes.

Whisk together the vinegar, olive oil, Parmesan cheese, garlic, lemon juice, chicken broth and salt and pepper. Drizzle over salad and serve.
