Red Onion & Beet Salad
Excellent served with grilled meat or poultry .

Servings: 4 Side Salads

• 2 cups cooked fresh beets, (if using canned, rinse very well)
• 1 cup sweet red onion, sliced paper thin

Dressing
1/4 cup cider vinegar
2 tablespoon lemon juice
1 teaspoon honey

Toss beets and onions with dressing and serve.
