Quick Crab Salad
This salad can be tossed together for a quick lunch on greens or a roll.

Servings: 4

• 1 1/4 cups crab meat (or imitation crab)
• 1 cup thin sliced celery
• 1/3 cup fat-free or light salad dressing (not mayonnaise)
• 1 tablespoon minced green onions
• 1/4 teaspoon salt
• Fresh ground black pepper

Combine crab meat And celery in a bowl. Mix salad dressing and onion and salt and pepper together. Pour over surimi. Toss together and refrigerate for about 2 hours before serving on salad greens or on a crusty roll.
