Purple Slaw
A satifying salad filled with healthy vegetables .

Servings: 12

• 1/2 medium head red cabbage, finely shredded
• 1/4 cup finely minced white sweet onion, vidalia
• 2 sweet apples, peeled, cored and finely diced
• 1/2 cup low fat mayonnaise
• 1/2 cup plain low fat yogurt
• 1/4 to 1/2 teaspoon salt
• 1/8 teaspoon pepper
• 2 teaspoons sugar
• 2 tablespoons lemon juice
• 2 tablespoons 2% milk

In a large serving bowl, toss together the cabbage, onion, and apples. In a small bowl, whisk together the mayonnaise, salt, pepper, sugar, lemon juice, and milk. Pour dressing over the cabbage mixture, and toss to coat. Chill until time to serve.
