Pineapple Cheddar Salad
Serve with any grilled meat or poultry

Servings: 6

• 3/4 cup small bite size chunks of fresh pineapple
• 8 cups torn salad greens
• 1 cup (4 ounces) shredded reduced fat cheddar cheese
• 1/2 cup low fat mayonnaise (we used Hellman's)
• 1 tablespoon sugar
• 1 tablespoon orange juice (pineapple juice can be used as well)

In a large bowl, combine the greens, pineapple and cheese. In a small bowl, whisk the mayonnaise, sugar and orange juice. Pour over salad; toss to coat.

Per Serving: 84 Calories; 3g Fat (30.8% calories from fat); 1g Saturated Fat; 6g Protein; 9g Carbohydrate; 2g Dietary Fiber; 4mg Cholesterol; 306mg Sodium. Exchanges: 1/2 Lean Meat; 1/2 Vegetable; 0 Fruit; 0 Other Carbohydrates.

COOK'S NOTE: I have made this with canned pineapple tidbits before and it is very good, but the fresh pineapple is so much better!
