• 3/4 cup small bite size chunks of fresh pineapple
• 8 cups torn salad greens
• 1 cup (4 ounces) shredded reduced fat cheddar cheese
• 1/2 cup low fat mayonnaise (we used Hellman's)
• 1 tablespoon sugar
• 1 tablespoon orange juice (pineapple juice can be used as well)
In a large bowl, combine the greens, pineapple and cheese. In a small bowl, whisk the mayonnaise, sugar and orange juice. Pour over salad; toss to coat.
