Pineapple and Grape Chicken Salad
Serve on bread or with crackers or as a salad.

Servings: 5

1/2 cups cooked chicken breast cut into bite size pieces
1/2 cup pineapple tidbits in juice (well drained)
1/2 cup red grapes, cut into halves(measure after cutting)
1/3 cup low fat mayonnaise (we used Hellman's)
1/4 cup toasted slivered almonds
Couple of grinds of black pepper

Combine all ingredients and mix well. Add salt if you desire. I do not think it needs it.

Chill and serve over lettuce or in a sandwich.

Per Serving: 187 Calories; 6g Fat (29.6% calories from fat); 1g Saturated Fat; 24g Protein; 9g Carbohydrate; 1g Dietary Fiber; 55mg Cholesterol; 200mg Sodium. Exchanges: 0 Grain(Starch); 3 Lean Meat; 1/2 Fruit; 1/2 Fat.
