Orange Papaya Shrimp Salad
Serve with your favorite crusty bread.
2 large navel
1 tablespoon shredded orange peel
1/3 cup fat-free mayonnaise dressing
3 tablespoons fresh orange juice
1 tablespoon jalapeno pepper, seeded, and finely chopped
2 teaspoons lime juice
1/8 teaspoon chili powder
6 cups torn mixed baby salad greens or a mixture of lettuce and
1 papaya, peeled and sliced
16 ounces shrimp in shell, cooked, peeled, and deveined
For the dressing,
combine fat-free mayonnaise, orange juice, the shredded orange peel, jalapeno
pepper, lime juice, and chili powder. Set dressing aside.
Peel orange and remove
white pith and membranes and slice orange segments. Divide greens among
four plates. Top with shrimp, orange slices, and papaya. Serve with dressing.
