Excellent served with grilled meat or poultry .

2 medium oranges, peeled, chopped
1/2 cup crumbled blue cheese
4 very thinly sliced red onion slices (or to taste)
8 cups baby arugula and spinach mix
1 tablespoon extra virgin olive oil
1 tablespoon balsamic vinegar
2 teaspoons honey
Salt and fresh pepper

In a small bowl combine oil, balsamic, honey, salt and pepper and whisk well.

In 4 plates or bowls add baby greens. Top with oranges, onion and blue cheese (2 tablespoons each). Drizzle vinaigrette over the top.
