Melon Salad with Orange Dressing
This salad is also delicious with peaches or nectarines instead of melon.

Servings: 6

• 1/4 cup orange juice
• 2 tablespoons honey
• 1/4 teaspoon ground ginger
• 1 - 20 ounce can pineapple chunks, drained
• 3 cups of any combination of watermelon, honeydew or cantaloupe chunks
• 1/2 cup blueberries

Stir together orange juice, honey and ginger in small bowl.

Combine pineapple chunks, watermelon and blueberries in bowl. Pour dressing over salad. Toss to evenly coat. Cover; refrigerate 15 minutes to allow flavors to blend.
