Mediterranean Garden Salad
Excellent served with grilled meats.

Servings: 6

• 1 1/2 cups diced plum or Roma tomatoes
• 1 cup diced green or yellow bell peppers
• 1 cup diced and peeled hothouse or English cucumber
• 1/2 cup minced fresh Italian parsley
• 1/3 cup chopped sweet hybrid onions
• 1/4 cup fresh lemon juice
• 1 small clove garlic, pressed
• 1 tablespoon olive oil
• 1/4 teaspoon salt
• 1/8 teaspoon fresh ground pepper

Combine ingredents in a salad bowl. Chill for 30 minutes to one hour before serving.
