Mediterranean Garden Salad
Excellent served with grilled meats.
1 1/2 cups
diced plum or Roma tomatoes
1 cup diced green or yellow bell peppers
1 cup diced and peeled hothouse or English cucumber
1/2 cup minced fresh Italian parsley
1/3 cup chopped sweet hybrid onions
1/4 cup fresh lemon juice
1 small clove garlic, pressed
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
Combine ingredents in a salad bowl. Chill for 30 minutes to one hour before
