1 medium sweet red onion (or sweet onion like Vadalia) peeled, finely chopped
Place onion in a bowl with the vinegar and oil. Toss well and cover, then place in refrigerator to marinate for 1 hour, until flavours blend.
When marinated, remove from fridge and add tomatoes, salt, and cracked black pepper.
Toss salad and just before serving, sprinkle tomato salad with the basil and serve.
