Marinated Onion & Cherry Tomatoes
Serve with grilled pork, poultry or meat.

Servings: 6

1 medium sweet red onion (or sweet onion like Vadalia) peeled, finely chopped
1/4 cup balsamic vinegar
2 tablespoons olive oil
1 1/3 pounds cherry tomatoes, washed and cut in half
Flaked or fine sea salt to taste
Cracked black pepper to taste
2 tablespoons basil, finely shredded

Place onion in a bowl with the vinegar and oil. Toss well and cover, then place in refrigerator to marinate for 1 hour, until flavours blend.

When marinated, remove from fridge and add tomatoes, salt, and cracked black pepper.

Toss salad and just before serving, sprinkle tomato salad with the basil and serve.
