Lettuce and Tomato Salad
This simple but tasty salad is fantatic with most anything.

Servings: 6

• 2 cups mesclun, rinsed and torn
• 2 cups romaine lettuce, rinsed and torn
• 2 cups Bibb or green leaf lettuce, rinsed and torn
• 12 slices Roma tomatoes
• 1/2 cup high quality balsamic vinegar
• 1 tablespoon extra virgin olive oil
• 1 tablespoon grated Romano cheese (or Romano/Parmesan mix)
• 2 cloves garlic, minced
• 1 tablespoon lime juice
• 1/4 cup low-fat or fat-free low sodium chicken broth
• Salt and pepper to taste

In a salad bowl, combine the mesclun, romaine, bibb or leaf lettuce and tomatoes. Whisk together the vinegar, olive oil, cheese, garlic lime juice, chicken broth and salt and pepper. Pour over salad, toss and serve.
