Hearts of Romaine Caesar Salad
Serve with your favorite grilled meat or poultry or fish.

Servings: 4

1/4 cup grated Parmesan or Parmesan/Romano cheese
1/4 cup fat-free mayonnaise
1/4 cup water
2 tablespoons lemon juice
1/2 teaspoon anchovy paste
1/2 teaspoon Worcestershire sauce
1/4 teaspoon fresh ground pepper
1/8 teaspoon dry mustard
1 - 2 cloves garlic, minced
1 1/2 - 2 cups reduced fat croutons
8 cups torn hearts of Romaine lettuce

Combine dressing ingredients (everything but the croutons and lettuce) in a small mixing bowl and whisk until smooth and completely mixed.

Just before serving combine the croutons and lettuce in a large bowl. Add dressing and toss.

COOKS NOTE: Do not toss until ready to serve.
