Greek Chicken Tomato Salad
Serve on lettuce or stuff in pita bread!
2 tablespoons lemon juice
2 pounds Roma tomatoes, chopped
3 cups chopped cooked chicken breast meat
1 hothouse cucumber, sliced
1/2 cup chopped Italian parsley
1/4 cup sliced red onion
1/4 cup fresh basil leaves, sliced
2 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground pepper
1/2 cup crumbled reduced fat feta cheese
Combine lemon zest, juice, tomatoes, and next 8 ingredients in a large bowl. Let stand 10 minutes. Toss with crumbled feta just before serving. 2 teaspoons lemon zest
Excellent served over a green leaf lettuce leaves or you can serve inside fresh pita bread halves.
If serving over lettuce, quarter tomatoes.
If serving in a pita, chop tomatoes.
