Fruit, Cheese and Mixed Greens
A wonderful mix of tart and sweet.

Servings: 4

• 2 teaspoons Dijon mustard
• 1 tablespoon balsamic vinegar
• 2 tablespoons extra-virgin olive oil
• 1/4 teaspoon dried crumbled tarragon *
• 24 seedless green grapes
• 1 crisp apple red sweet apple
• 8 ounces mixed baby salad greens
• 1/4 cup crumbled feta cheese**

In a large bowl whisk together mustard and vinegar. Add oil in a slow stream, whisking until emulsified. Whisk in tarragon and salt and pepper to taste.
Halve grapes. Core apple and cut into 16 wedges. Add mesclun to vinaigrette and toss to coat well.

Divide greens and apple slices among 4 plates and top with grapes, cheese, and almonds.

* If you have fresh tarragon, use 1 teaspoon.
** If you can find reduced fat feta cheese, you can further reduce the fat and calories.
