Fresh Tomato Salad
If you grow your own tomatoes, this is the salad for you .

Servings: 6

• 2 tablespoons extra virgin olive oil
• 2 tablespoons light malt vinegar
• 3/4 teaspoon brown sugar
• 1/2 teaspoon ground sea salt
• 1/2 teaspoon fresh coarse ground black pepper
• 2 pounds fresh ripe tomatoes, cut crosswise into nice thick slices (about 1/2")
• 1 green onion, thinly sliced diagonally

Whisk together oil, vinegar, brown sugar, salt, and pepper in a small bowl. Lay out about one third of the sliced tomatoes in a single layer on a large plate, then drizzle with some dressing and sprinkle with some green onion. Make 2 more layers of tomatoes, drizzling each with dressing and sprinkling with green onion.
Best if onion is not added until ready to serve.
