Fresh Garden Feta Salad
Serve with hot fresh French bread.

Servings: 4

Salad:
• 3 cucumbers, peeled, halved, seeded & sliced in 1/4 inch slices
• 2 cups cherry tomatoes, halved
• 1 large red bell pepper, chopped
• 1/4 cup green onion, chopped
• 1/4 cup pitted kalamata olives
• 1/2 cup low fat feta cheese
• 8 - 12 green or red leaf lettuce leaves
Dressing:
• 1 tablespoon red wine vinegar
• 2 tablespoons balsamic vinegar
• 1/2 teaspoon granulated sugar
• 1 tablespoon extra virgin olive oil
• 1/4 cup shredded fresh basil
• 1/2 teaspoon ground sea salt
• freshly ground black pepper to taste

Mix dressing ingredients in a large salad bowl and mix well. Add remaining ingredients except for lettuce leaves and toss well.

Serve on bed of green or red leaf lettuce.
