Crab, Cucumber & Sweet Pepper Salad
Light and Fresh.

Servings: 4

• 2 large red or yellow sweet bell peppers
8 ounces chunk style imitation crabmeat
2 medium tomatoes, chopped
1 hothouse cucumber, halved and thinly sliced
1/2 cup reduced calorie Thousand Island dressing

Arange sweet pepper strips on a serving platter. Top with crabmeat, tomatoes, cucumbers. Drizzle with dressing and serve.
