Corn Salad
Serve as a side dish with grilled meats or poultry.

Servings: 8

• 1 - 10 ounce package frozen corn, thawed
• 1 cup diced green bell pepper
• 1 cup diced red bell pepper
• 1 cup diced celery
• 1/2 cup minced fresh Italian parsley
• 1/2 cup chopped green onions
• 1/4 cup shredded parmesan cheese (not grated)
• 1 teaspoons ground cumin
• 3/4 teaspoon salt
• 3/8 teaspoon fresh ground black pepper
• 1/4 teaspoon hot pepper sauce
• 1/16 teaspoon cayenne pepper
• 4 1/2 teaspoons olive oil
• 1 clove garlic, minced
• 3 tablespoons lime juice

In large bowl, combine first 12 ingredients.

In microwave safe dish, combine oil and garlic. Microwave, uncovered, on high for 45 seconds to 1 minute. Whisk in lime juice. Pour over the corn mixture and toss to coat. Cover, and refrigerate until time to serve.
