Corn and Black Bean Salad
Excellent served with grilled meat or poultry .

Servings: 4

1 can, 14 ounces, black beans, rinsed and drained
2 cups frozen corn kernals, thawed
1 small red bell pepper, seeded and chopped
1/2 red onion, chopped
1/3 cup chopped fresh cilantro
1 1/2 teaspoons ground cumin (generous as I love cumin)
1 - 2 teaspoon Cholulu hot sauce or Tabasco
Juice of one lime
1 tablespoons olive oil
Kosher salt and pepper

Combine all ingredients in a bowl. Let stand at least 15 minutes for
flavors to combine, then toss and serve.

COOKS NOTE: This is even better the next day.
