Citrus Spinach Salad
This salad is a wonderful mix of flavors.

Servings: 4

• 6 cups fresh baby spinach leaves
• 1 small red onion, thinly sliced in rings
• 2 fresh navel orange, peeled and separated into sections*
• 2 tablespoons toasted pine nuts

• 4 tablespoons orange juice
• 4 tablespoons white wine vinegar or rice vinegar
• 1 tablespoons extra virgin olive oil
• 4 teaspoons honey
• 2 tablespoon chopped fresh cilantro
• 4 teaspoon Dijon mustard
• Salt and fresh ground pepper to taste

Toss spinach, onion, orange and pine nuts together. Whisk together all dressing ingredients. Pour over salad and serve.

COOKS NOTE: You may substitute 1 small can mandarian oranges if you prefer.
