Chopped Salad
Excellent served with grill chicken.

Servings: 4

2 medium tomatoes, seeded and diced
1 cup hot house cucumber, diced
1/4 cup small green onions, chopped
1/4 cup fresh Italian parsley, coarsely chopped
1/4 cup black olives, chopped
2 tablespoons extra-virgin olive oil
1 tablespoon white wine or rice vinegar
Salt and pepper to taste

Combine all ingredients in bowl. Chill for 30 minutes. Serve immediately.
