Serve with big glasses of iced tea!

Serves 4

• 1/4 cup buttermilk
• 1 tablespoon low fat mayonnaise (we used Hellmann's®)
• 1 tablespoon fresh lime juice
• 1/2 teaspoon kosher salt
• 1/8 teaspoon ground red pepper
• 1 garlic clove, peeled
• 1/2 ripe peeled avocado, seeded and coarsely mashed
• 4 cups torn butter lettuce
• 2 cups diced cooked boneless skinless chicken breast
• 1/2 cup thinly sliced green onions
• 2 tablespoons chopped fresh cilantro
• 1 cup croutons

Combine first 7 ingredients in a blender, and process until smooth, scraping sides. Set aside.

Combine lettuce and remaining ingredients in a large bowl. Drizzle buttermilk mixture over lettuce mixture; toss gently to coat. Divide among four plates and top each serving with 1/4 cup croutons
