Parmesan Chicken and Bibb Lettuce Salad
A wonderful main dish salad.

Servings: 4

• 1 pound boneless skinless chicken breast halves, grilled & seasoned to taste
• 8 cups bibb lettuce leafs, torn in bite size pieces
• 4 small Roma tomatoes, cut in wedges
• 1 red bell pepper, cut in rings and each ring halved
• 1 green bell pepper, cut in rings and each ring halved
• 1 carrot, peeled and cut in juiliene pieces
• 1 cup or less fat-free Parmesan Italian dressing
• 1 ounce Parmesan cheese, cut in curls

Mix salad greens, pepper slices, tomato wedges and carrot together. Divide amoung 4 plates. Slice chicken breasts and place on top of salad greens. Sprinkle with Parmesan curls and serve with Parmesan Italian dressing or other favorite dressing.
