Carrot Yogurt Salad
Wonderful served with grilled pork loin.

Servings: 4

2 cups coarsely grated carrot
1 1/2 cups coarsely grated apple
6 tablespoons raisins
1/2 cup low-fat yogurt
1 teaspoon sugar (or honey)
2 - 4 teaspoon lemon juice (depending sweetness desired)
Dash of salt

Mix all ingredients together and serve immediately. Color turns after one hour.
