Broccoli Sesame Salad
Excellent served with grilled or roasted meat or poultry .

Servings: 5

2 cups broccoli
1 tablespoon + 1 teaspoon rice vinegar
2 teaspoons reduced sodium soy sauce
1/2 teaspoon sesame oil
3/4 teaspoon toasted sesame seeds
1/8 to 1/4 teaspoon crushed red pepper flakes (optional)

Wash and chop the broccoli into mouth size bits. Peel the bigger steams, if the skin is tough.

Put the chopped broccoli in a medium-sized bowl and toss with the remaining ingredients. You can skip the red pepper flakes, if you prefer, or add more or less depending on the degree of spiciness you prefer.
