Arugula Pear Salad
Serve with crusty French bread.

Servings: 4

• 6 cups baby arugula
• 1 teaspoon fresh lemon juice
• 1/8 teaspoon salt
• 2 tablespoons olive oil
• 2 pears, cored and sliced

• 2 ounces shaved Parmesan

Toss together baby arugula, lemon juice, and salt in a bowl. Drizzle with oil and toss to combine well. Divide greens among plates and top with sliced pears and shaved Parmesan.
