Apple Spinach Salad
Excellent Served with Poultry, Pork or Ham

Servings: 8

3 tablespoons olive oil
3 tablespoons apple cider vinegar
2 tablespoons Dijon mustard
2 tablespoons sugar
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
2 golden delicious apple, halved, cored, thinly sliced
1/2 cup red onion, cut in very thin strips
1 1/2 pounds fresh spinach, washed, stems removed, leaves torn
1 cup dried cranberries

In serving bowl, whisk oil, vinegar, mustard, sugar, salt and pepper until blended. Add apple and onion.

Toss until apples and onions are covered with dressing.

Place spinach on top, then pecans. Just before serving, toss.
