Apple Chicken Salad
Serve on top of lettuce leaves

Servings: 6

• 2/3 cup low fat mayonnaise (We used Hellmann's®)
• 2 tablespoons lemon juice
• 1/2 teaspoon kosher salt
• 1/4 teaspoon fresh ground black pepper
• 2 cups diced cooked chicken breast
• 2 small red apples, cored &,diced
• 2/3 cup diced celery
• 1/4 cup chopped walnuts

In a bowl, combine the mayonnaise, lemon juice, salt and pepper. Add the chicken, apples and celery. Toss to coat. Cover and chill. Sprinkle with walnuts just before serving.
