Chile Rellenos Casserole
This low fat breakfast recipe is wonderful.
NOTE - This is not Vegan - Contains Dairy and Eggs

Servings: 12

• 2 - 4 oz. cans diced green chilies
• 2 cups low fat cheddar cheese, shredded
• 2 cups skim milk
• 1 cup frozen egg substitute
• 1 cup low fat cottage cheese
• 1 cup low fat biscuit mix

Spray 12 x 7.5 x 2 inch casserole dish with cooking oil spray. Preheat oven to 350°F.

Drain green chilies and layer on bottom of dish. Sprinkle cheese on top.

Mix egg substitute, milk and biscuit mix with whisk until smooth. Stir in cottage cheese. Spoon mixture over cheese and chilies. Bake for 45 minutes. Serve warm.
