2 teaspoons
olive oil
1/4 cup finely chopped green onion
1 teaspoon finely chopped garlic
16 sea scallops
1 1/2 cups chopped tomatoes
1 cup tomato sauce
1/4 teaspoon salt (or to taste)
1/4 teaspoon fresh ground black pepper
1/4 teaspoon red pepper flakes (or to taste)
1 teaspoon Italian seasoning
Heat olive oil in large skillet. Add green onion and garlic, saute 1 minute.
Add scallops, saute for 2 minutes on each side. Remove and keep warm.
To skillet, add chopped tomato, tomato sauce and seasonings. Bring to
a boil, and simmer while stirring for 1 minute. Add scallops and heat
until heated through.
Serve over angle hair pasta. Garnish with chopped fresh Italian parsley
and grated Parmesan cheese.
