Grilled Tilapia with Caper Sauce
Serve with any steam vegetable and a salad

Serves 4

Sauce:

  • 1 1/2 tablespoons fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 1/2 teaspoons finely chopped shallot
  • 1 teaspoon chopped capers
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Fish:

  • Cooking spray
  • 4 (6-ounce) tilapia fillets (or any other white fish)
  • 1/2 teaspoon kosher salt
  • 2 tablespoons chopped fresh chives

To prepare the sauce, combine first 6 ingredients in a small bowl; stir with a whisk.

To prepare fish, heat a nonstick grill pan over medium-high heat. Coat pan with cooking spray. Sprinkle fish with 1/2 teaspoon salt. Add fish to pan; grill 4 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness. Spoon vinaigrette over fish. Sprinkle with chives.
