Easy Baked White Fish
Serve with broccoli or green beans

Serves 4

• 1 1/2 pounds white fish fillets (haddock, grouper or other)
• Cooking spray
• 1 tablespoon fresh lime juice
• 1 tablespoon low fat mayonnaise (we used Hellman's)
• 1/8 teaspoon onion powder
• 1/8 teaspoon black pepper
• 1/2 cup fresh breadcrumbs
• 1 tablespoons butter, melted
• 2 tablespoons minced fresh parsley
Preheat oven to 425°. |

Place fish in a baking dish large enough to easily accomodate fillet. Lightly spray with cooking spray. Combine lime juice, mayo, onion powder, and pepper in a small bowl, and then spread over one side of fish. Sprinkle with breadcrumbs; drizzle with melted butter. Bake at 425° for 20 minutes or until fish flakes easily when tested with a fork. Sprinkle with parsley.
Adjust the baking time depending on the thickness of the fish.
COOK'S NOTE: To make fresh breadcrumbs, pull apart day old bread into pieces and place in a food processor. Pulse until crumbs form.
