Vanilla Poached Pears

A perfect ending to any light meal

Servings: 8

• 4 large pears, halved, peeled, and cored
• 3 - 4 cups apple juice, or more if needed to cover pears
• 1 1/2 inch piece fresh vanilla beans
• Ground cinnamon for garnish

Place the pears in a large saucepan and pour apple juice in to cover the pears.
Add vanilla bean and bring the pears to a simmer over medium heat. Simmer lightly until tender. Be careful not to scorch.

Allow pears to cool before serving. Place pear halves on dessert plates and spoon a small amount of the reduced apple juice over the pears, then sprinkle lightly with ground cinnamon.
