Creamy Tapioca

Serve with or without raisins.

Servings: 6 - 1/2 cup servings

1/3 cup sugar
3 tablespoons minute tapioca
2 3/4 cups 2% milk
1 egg, beaten
1 teaspoon vanilla extract

Mix sugar, tapioca, milk and egg in a saucepan, let set 5 minutes. Cook on medium heat, stirring constantly, til mixture comes to a full boil.

Remove from heat, then stir in vanilla. Cool 20 minutes, then stir. Serve warm or cold.
