Apricot Coconut Balls
8 ounces dried
apricots, finely chopped
In a food processor
chop apricots and coconut until thoroughly combined.
When apricot mixture
is chilled, shape into balls (about 1-inch in diameter). Roll in coconut;
place on wax paper. Refrigerate until firm.
COOKS NOTE: May also use finely chopped toasted nuts to roll in.
