Tomatillo Salsa
Serve with baked tortilla chips.

1/2 pound Tomatillo,
cut into strips
2 teaspoons Chipotle
chilies, finely chopped
2 tablespoons fresh cilantro,
finely chopped
2 teaspoons fresh lemon
juice
1 teaspoon fresh lime
juice
1/2 teaspoon fresh grated lemon
rind
1/2 teaspoon fresh ground
black pepper
1/4 teaspoon salt
Combine Tomatillo,
chipotle chilies, onion, cilantro, lemon rind, lemon juice, lime juice,
salt and pepper in a bowl. Cover and refrigerate for 1 hour or more to
allow flavors to mingle (Best if prepared the night before).
