Tomatillo Salsa
Serve with baked tortilla chips.

Yield: 2 Cups

• 1/2 pound Tomatillo, cut into strips
• 2 teaspoons Chipotle chilies, finely chopped
• 2 tablespoons fresh cilantro, finely chopped
• 2 teaspoons fresh lemon juice
• 1 teaspoon fresh lime juice
• 1/2 teaspoon fresh grated lemon rind
• 1/2 teaspoon fresh ground black pepper
• 1/4 teaspoon salt

Combine Tomatillo, chipotle chilies, onion, cilantro, lemon rind, lemon juice, lime juice, salt and pepper in a bowl. Cover and refrigerate for 1 hour or more to allow flavors to mingle (Best if prepared the night before).
