Surimi Salad Spread
Premade fillo shells make these so easy and quick.

Servings: 12

1 pound imitation crabmeat (surimi), chopped fine
2 celery ribs, minced
2 tablespoons minced sweet onion
2 tablespoons chopped fresh parsley
1 teaspoon Dijon mustard
1/2 cup low fat mayonnaise (we used Hellman's)
1/4 teaspoon pepper
1 pinch garlic powder
Couple of dashes of Cholulu Hot Sauce (optional)
Seasoned salt (nutrition based on 1/4 teaspoon)
1/2 cup sliced black olives, minced

In a large bowl, stir together the crabmeat, celery, onion, parsley, mustard, mayonnaise, pepper, garlic powder and hot sauce. Season to taste with seasoned salt, fold in black olives if using. Cover, and refrigerate for at least 45 minutes. Taste before serving and adjust seasonings to taste.

Serve with low fat crackers.
