Ground Turkey Tacos
If you like things hot - leave in the ed jalapeno pepper seeds.

Serves 8

1 teaspoon oil
2 cloves garlic, minced
1 or 2 small jalapeños, finely chopped
1 teaspoons  ground cumin
1/2 teaspoon chili powder
1 1/4 pounds lean ground turkey (93/7)
1/2 teaspoon kosher salt
1/4 cup minced cilantro
2 tablespoons fresh lime juice
8 corn tortillas or corn taco shells *

Toppings:
Chopped tomato
Spring mix lettuce or shredded greens
Reduced fat cheese
Light sour cream
Pico de Gallo and/or your favorite salsa


Heat oil in a large frying pan over medium-high heat. Add garlic and chilies. Cook, stirring, until fragrant and soft, about 2 minutes. Add cumin and chili powder and stir to combine until spices sizzle, about 30 seconds. Add turkey and salt. Stir to combine and break up meat with the back of the spoon or spatula.

Cook, stirring occasionally, until turkey is cooked through. Reduce the heat to medium low, and cover to heat everything up and let the flavors blend a bit, about 10 minutes.
When meat is cooked, take off heat and stir in cilantro and lime juice.

Heat tortillas and top each one with some ground turkey, salsa,  tomato, and lettuce (or fill each taco shell). Add sour cream or shredded cheese, pico de gallo or salsa if you like. Or let everyone assemble their own tacos to taste.

* Flour tortillas can also be used.
